Weekend mornings were made for lingering over a long breakfast and slowly sipping on a large cappuccino. This Blueberry French Toast is perfect for just that, simply enjoying.
Blueberries are delicious, but they are only in season from May to late summer and can rarely be found in a grocery store during the fall and winter months. This blueberry bread can be found year round, which means that we can enjoy these heartwarming Blueberry French Toast whenever we want.
Blueberry French Toast
4 slices of blueberry bread
3 teaspoons of cinnamon
1/4 cup light brown sugar
pinch of salt
1 tablespoons of butter
2 teaspoons powdered sugar
In a medium pan on medium/high heat place 1/2 tablespoon of butter. In a deep plate whisk the egg with the cinnamon, brown sugar and pinch of salt. Coat each slice of the blueberry bread on both sides with the egg mixture. When the the butter in the pan is hot and sizzling, add two slices of the bread and flip so that both sides are toasted. Repeat with the other two slices and sprinkle with the powdered sugar. Drizzle with honey and serve warm.
