Curried Chicken Salad

I love creating an exotic experience from a meal, that makes me feel as though I am halfway around the world in a foreign country. There is nothing like eating Indian inspired food, with my hands, on a low table, sitting on a cushioned floor,  and listening to the “all India” station on Pandora. Almost as if  I was roaming through Mumbai, (almost).

This Curried Chicken Salad takes about 15 minutes to make (thanks to the store bought rotisserie chicken) and is deliciously healthy because greek yogurt is used instead of mayo, normally found in a chicken salad.  The golden raisins give this dish a pop of sweetness, which pairs perfectly with the crunch of the walnut, and spiciness of the curry and cayenne.

Curried Chicken Salad

Ingredients

1 whole rotisserie chicken
1 cup of plain greek yogurt
2 tablespoons of curry powder
2 teaspoons of cayenne pepper
1 tablespoon of extra virgin olive oil
1 teaspoon salt
1/4 cup of golden raisins
1/4 cup of walnuts, chopped

Directions

With a fork, shred the rotisserie chicken and place in a medium bowl. Place the greek yogurt into the chicken and mix in the curry powder, cayenne pepper, golden raisins and chopped walnuts . Mix until all of the ingredients are well combined. Drizzle with the olive oil and serve.

Notes:
Refrigerate the leftovers for up to three days.
Serve with couscous or wrapped in a pita with veggies.
Greek Yogurt can replace many ingredients to make a recipe healthier, such as this.
