These Raspberry Oatmeal Bars should come with a loud warning.  They are hard to resist, and will certainly test your will power.  Something  magical happens when you combine oatmeal with sugar, flour & melted butter, and sandwich it between oozing raspberry jam.  As soon as they come out of the oven, these oatmeal bars fill your kitchen with a mouthwatering aroma.

Raspberry Oatmeal Bars


1 cup rolled oats
1 cup all-purpose flour
1 cup light brown sugar
1/2 cup of butter, melted
3/4 cup raspberry jam
1/4 teaspoon baking soda
1 pinch of salt


Pre heat the oven to 350 degrees F. Grease an 8×8 inch square pan. In a medium bowl combine the light brown sugar, all-purpose flour, rolled oats, baking soda, and salt. Mix in the melted butter until you have a well combined, yet crumbly mixture. Press half of the mixture onto the bottom of the pan. Spread the jam evenly throughout the surface of the mixture. Sprinkle the rest of the mixture on top of the jam and press lightly. Place in pre-heated oven for 30 to 40 min. Remove from the oven and let cool until cutting into bars, if you can wait that long!
