Soft Oatmeal-Date Cookies

Vacation mode is over and gone. I am back with a delicious recipe that is somewhat healthy and extremely enjoyable. I am sure everyone over ate during the holidays, as I did. So what better way to get back into the swing of things then with energizing cookies that are easy to create, and on the healthy side too! The perfect combination of oatmeal, whole wheat flour, dates and cinnamon give this cookie a breakfast stamp of approval, especially on mornings when you only have time to prepare a quick cup or two of coffee as you rush out the door.



Oatmeal-Date Cookies

1 cup of butter (2 sticks), room temperature
2/3 cup of sugar
2/3 cup of brown sugar
2 eggs
1 teaspoon vanilla extract
1½ cups whole wheat flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1½ regular uncooked oatmeal
1 cup of chopped dates

In a medium bowl, cream the butter and gradually add the sugar. Mix in the eggs one at a time and mix in the vanilla. Beat well, and combine the flour and baking soda along with the cinnamon into the cream mixture. Stir in the uncooked oats and chopped dates. Refrigerate the cookie dough for about an hour (or as long as you can wait off eating these cookies). Pre heat oven to 350º and bake for 10-12 minutes. Cool for 5 minutes and feel free to devour.

Makes about 30 cookies (enough for sharing)

  1. These look great Danni! I’m really jealous of your silpat baking mat, they don’t do them in the UK 😦 I love the idea of dates in cookies, I use them in cakes loads, but never in cookies – yum!
